Cinnamon Cocoa Crepes with Apple Filling

Love crepes, but don’t want to be in the kitchen all morning?  Me too! I’m usually a 100% made from scratch kind of mom, but sometimes I like a little help from Bisquick, so semi-homemade crepes always make me happy.

It begins with fresh apples, at least 5 small ones or three regular sized Fujis.  Cook them on medium heat in a saucepan with about 2 tablespoons of butter, a dash of cinnamon, 1 tablespoon of sugar and viola!  I like my apples a little on the crunchy side, even when cooked, so it only takes 2 minutes on the stove top.

For the batter I use buttermilk Bisquick mix and I keep adding water until it’s the consistency of melted ice cream. For cocoa crepes, add about a 1/2 cup of Hershey’s Cocoa Mix and as much cinnamon as you like.  If you need a more specific recipe, but also more time consuming one, use this:

1/2 cup Buttermilk Pancake Mix
1/2 cup all-purpose flour
1 1/4 cups water
2 eggs, beaten
2 tablespoons butter, melted

There isn’t any one way to correctly fold a crepe, so have a good time playing with different plating ideas.

Powdered sugar is so much fun to play with!

We don’t add any syrup to our cocoa crepes, they are sweet and delicious enough all on their own.  Kinda like Peyton.
